Lidah Sambal Hijau/Lidah Lado Mudo: Beef Tongue in Green Chilli Marinade
Grow up in a Minang neighborhood make me have a sweet spot of Minang culinary. I love the savory Nasi Padang and enjoy the sweet bubur sampiun thoroughly. However, beef ongue (lidah) is one of my favorite Padang dishes. Some people are feeling reluctant to cook tongue because cleaning the whitish upper layer of the tongue (mucous layer) can be time consuming. But here I will explain how I clean it easily.
The cooking consists of two steps: processing the beef tongue and make the sambal hijau (lado mudo in Minang language)

Cooking time: 1hr 15 minutes
Servings: 6

Step 1: Processing beef tongue
Ingredients
  1. 1,4 kg beef tongue. Wash thoroughly with tap water.
  2. 30 gr galangal, skinned and crushed
  3. 1 tsp grinded coriander (ketumbar)
  4. 4 bayleaf (daun salam)
  5. One large onion, sliced
  6. Make into paste :6 shallots and 3 onions
  7. 1 tsp cooking oil
  8. 1 tsp salt
Instructions:
  1. Wash thoroughly beef tongue and boil it in a pan with enough water to cover the tongue. Discard the scum and once boiled, turn down the heat and let it cooked for 30 minutes. Discard the water, and set the tongue aside until it cool down. Brush the upper layer of tongue with towel, and trim unwanted fat with knife. Cut the tongue lengthwise.
  2. Heat oil in the pan. Just use medium heat. Add shallots and onion paste until fragrant (about 2 minutes) onion and coriander until softened.
  3. Add tongue and stir in until the spices is mixed thoroughly with tongue cuts.

Step 2: Making Sambal Ijo/Lado Mudo
Ingredients
  1. 200gr of green chilli. Cut off the stalk. Grind coarsely in mortar.
  2. 6 shallots sliced thinly
  3. Make into paste: 6 shallots and 4 garlic
  4. 1 tsp grind coriander
  5. 1 tsp salt
  6. 60 ml cooking oil
Instructions
  1. Heat oil in a large pan/wok with medium heat. Add shallots & onion paste. Cook until fragrant (2-3 minutes)
  2. Add coriander
  3. Add grinded chilli, then immediately slow the heat otherwise the chilli will burnt
  4. Mix until the chilli is softened, then add sliced shallots
  5. When the shallots is softened, add salt.

  6. Add the beef tongue into sambal hijau and mix well.
  7. Transfer to serving plate and enjoy with steamed rice (nasi putih)
