Ayam Pop Padang aka Padang Coconut Fried Chicken

Ayam Pop Padang


This chicken dish is a quite famous Padang culinary. It's a simple fried chicken, marinated with coconut water so it has a distinctive sweet and spicy flavor. My favourite place to have  Ayam Pop is at Restoran Garuda Pondok Indah or Sederhana restaurant. However, I try to create one and it turns out very easy and yummy.  So if you like Ayam Pop why don't you give it a try to make this?




Preparation time: 15 minutes
Cooking time : 45 minutes
Serving: 4

INGREDIENTS
1,2 kg chicken, cut in 8 pieces
Make into paste: 10 shallots, 5 onion and 3 candlenut
200 ml coconut water (fresh coconut water tastes best)
4 kefir lime leaves
1 stalk lemongrass, crushed
2 tsp grinder coriander
1 tsp salt
cooking oil

INSTRUCTIONS

  1. put coconut water in pan add kefir lime leaves, lemongrass, spice paste and coriander. Mix well
  2. add chicken to the pan. Stir well. Add salt
  3. Once boiled, simmered down about 20 minutes until the chicken is cooked and the marinating liquid is thickened. Do not forget to adjust the taste.
  4. Take the chicken from the marinade and set aside
  5. fry the chicken, just to brown the skin a little bit. 
  6. Enjoy with steamed rice and sambal (chili sauce) of your choice.

Note: In some Padang restaurant, the chicken is not fried, but only dunk in spiced oil.
